We are glad to collaborate with ILHAM- Afghan Cuisine- An initiative for the Afghan Refugee single mothers; which means “inspiration” or “positive”. It was launched in late 2015 by the UN refugee agency, UNHCR India, and its partner ACCESS. The initiative brings together four women, all refugees from conflict-torn Afghanistan, serving traditional Afghani dishes and also serving inspiration to the capital.
This Commeat’s table is all about the beautiful cuisine and the inspiring stories of these women. We aim to entrust these women find an identity in India.
Join us for this experience curated by Afghan refugees of Ilham at a nominal cost Rs.1500. We have limited seating for a special gathering so register fast!
Ashak is an Afghan dish made of pasta dumplings filled with scallion, with a (frequently meaty) tomato sauce, topped with yogurt and dried mint.
Shammi Kebab: Shammi kebab literally means Syrian kebab (Sham) in Arabic. This kabab almost appears like a patty or cutlet which is pan fried and served with mint or coriander chutney. It is a nutritious and healthy kebab.
Afghani Samosa: A traditional dish, stuffed with chicken inside smashed with onions and Green Chillies.
Afghani Chai: Hospitality and tea play a very important part in the lives of the Afghan people. Tea is drunk copiously throughout the day, so a special Afghan tea would be served as well.
Mains
Kabuli Pulao: Traditional Afghan Rice ( Kabli Pallow) cooked in chicken, Onion broth and a secret blend of spices and zaffran. Garnished with carrots, raisin, almonds.
Mutton-Do-Pyaza: A succulent mutton dish, Mutton do pyaza is a beautiful dish where onions are added in two stages. Served with the famous Afghan bread.
Qormi-E-Murgh: Chicken pieces prepared in yogurt and spiced with ginger and garlic, green chillies, special masala and Chickpea flour.
Borani Banjan: One of the signature Afghan recipe is Borani Banjan, eggplant recipe layered with tomatoes, yoghurt, herbs and spices.
Daal Zard: Indian yellow masoor daal cooked Afghani styles.
Afghani Roti: Afghan bread, or Naan-e Afghani
Desserts
Khajur: Khajur is one of the most popular Afghan desserts, p fried delicious pastry in shape of donuts.
Firni: Phirni (Firni), a traditional rice custard cooked with milk and delicately flavoured with rosewater and pistachios or almonds.
