About the Event
Authenticook in collaboration with Neel – Tote on the Turf is hosting the authentic flavours of Bihari food pop-up. Home chef Chandana who has hosted a number of in-home dining experiences and successful restaurant pop-ups, will cook up some traditional Bihari Veg and Non Veg dishes with the help of the wonderful kitchen staff at the restaurant. The meal will be served course-wise at your table to ensure that you are able to focus and appreciate each dish in its entirety.

COMMON DISHES
LITTI-CHOKHA
Poor man’s food once upon a time, this is perhaps the most famous culinary export from Bihar now! We do it the classic way. Served with traditional accompaniments like Aloo Chokha, Baingan Chokha, Tamatar Bharta, Dhaniya Chutney and Garam Ghee
BARRA, KACHRI, BHABHRA & ALOO CUT
These are classic evening time snacks in Bihar; deep fried fritters of various hues!
ALOO-PARWAL BHUJIYA
For some unknown reasons, any vegetable curry is called “subzi” or “tarkari” in Bihar, while the ones without gravies are called Bhujiya. We make this with thinly cut pieces of potato and parwal.
VEGETARIAN DISHES
KATHAL KI TARKARI
Jackfruit cooked in mustard oil with native Bihari masalas. Very classic, very robust!
KOHRA KA SABZI
Red Pumpkin is a popular vegetable in Bihar, especially on religious occasions.
KACCHU KI SABZI
This is more from the southern belt of Bihar, part of which is now called Jharkhand. This is Arbi in a thick gravy made of yellow mustard paste and tamarind!
BAINGAN KA BACHKA
Thin roundels of Aubergine, pan seared in mustard oil
NON-VEGETARIAN DISHES
MAGADHI MUTTON SHEEK
This Sheek is made with thin slivers of lamb leg and cooked over sigree.
CHICKEN GOLI
Chicken mince balls with rustic spices; deep fried to perfection!
AHUNA CHICKEN
This chicken dish has about 28 kinds of spices, marinated overnight, then stuffed in green bamboo and cooked overnight on slow fire.
CHAMPARAN MEAT
This is the latest culinary export from Bihar. Lamb pieces and shanks, cooked on slow fire in an earthen pot with onions and native spices.
TAMATAR MATTAR MACCHLI
This river fish is a bit unconventional; cooked in a tomato based gravy with green peas. Goes very well with Rice.

USNA BHAAT
Unpolished rice eaten traditionally in Bihar
PEELA PULAO
A simple Basmati Pulao with cloves, black peppercorns & turmeric. A must in Bihari weddings!
CHANNA DAL TADKA
For any festive occasion in Bihar, Chana Dal is the default choice! It is tempered with Cumin seeds, lots of garlic and ghee.

Bihari version of Gujhiya; this one has a gooey stuffing and a crispy crust!

Again a classic from Bihar where a sweet boondi is eaten with fresh yoghurt. It’s a lovely marriage
