About the Event
Our Hunger Inc pastry wiz Heena Punwani is teaching you to make her favourite bread, the Babka but with an #indianinspired twist! That perfect rich buttery tea time treat that you can make for your loved ones! Making the Babka includes technique and precision and Chef Heena will break down all the basics in this elaborate demo!
What will you learn at this workshop?
- You will learn the basics of brioche dough
- To make the chocolate, filter coffee-cardamom filling (with tips on variations)
- How to prepare candied walnuts (with technique to make any kind of candied nuts)
- Preparting the filter coffee-jaggery caramel
- How to make the Babka
This is a demo only. You can ask Chef Heena questions during the demo and make it at your convenience at another time.

About Chef Heena Punwani
Having worked for 6 years as a software engineer, Heena decided to pursue her passion and traded in her laptop for a chef's apron. She trained at the prestigious French School for Culinary Arts, Ferrandi in Paris and honed her skills at French pâtisserie Carette. Back in Mumbai, she served her delicious treats as the Pastry Chef at Ellipsis.
Today, she is the Executive Pastry Chef for The Bombay Canteen and O Pedro and also heads Brun & Babka, the one stop for nostalgia inspired sweet treats!
