Building on our innovative food programme at ARAKU, we introduce ‘Together with ARAKU,’ a ten-course tasting menu centred on fresh, seasonal produce and Chef Rahul’s cuisine-agnostic experiments with them. All the dishes are meant to be shared – family style! 

“Our ingredient-focused approach explores various textures and flavour possibilities of produce – and through it, we extract the full potential of food,” says Chef Rahul Sharma. Whose notable new introductions include: Sautéed Spinach, which uses different textures of Okinawa spinach. Dry-aged chicken empanadas with fermented pepper sauce. 

The menu infuses even the most quotidien ingredients with playful flavours, presented in a family-style share-able format. Munch on roasted peppers and Okinawa spinach harvested from our farm in Denkanikottai; feast on roasted pumpkin with pickles or dandelion with crab emulsion; finish off your meal with our zero-waste treats, Cascara Bon Bons. The Bon Bons are made with coffee cascara (which are otherwise discarded), ARAKU Selection coffee, 75% Dark Chocolate, organic sugar, buckwheat flour, almond milk and amaranth.

Pair the experience with our selection of natural wines. Organic and biodynamic wines have long been hailed as the future. The grapes on our wine list were farmed following organic or biodynamic precepts and are produced with minimal artifice.
